Mary

As promised- recipe. Imperial as I'm still living in the past!!

4oz ground almonds
4 o ground hazelnuts
2oz mixed peel
1 tabsp clear honey
8oz icing sugar
pinch of cinnamon
2 beaten egg whites

Mix together dry ingredients, add honey, then egg whites. Roll out dough on board dusted with icing sugar- warning- you need lots, as it gets very sticky!

Cut into star shapes and bake for about 15 mins at gas mark 2, using baking parchment to line the tray. This is only an approxiate time- I find it sometimes takes a bit longer, until they're set. I've also done them on rice paper before, really nice but more expensive.

Enjoy!

Thanks Maria!

I'm more than a bit worried about Mary L trying this though, especially as it's very sticky. She's a really messy so and so you know and I dread to think what their kitchen will look like when she's finished!!

Lots of love

Just off to print this off. My 16 year old has just discovered baking and as she has no wheat and no lactose these will be ideal for her to try. Thanks :) x

Jean-I'm as bad as Mary when I'm cooking!!!

It is a lovely recipe- I always make a batch for a friend who can't eat wheat.

Another warning- they are very addictive!!
